The leaves of the black eyed peas, more commonly known as cow peas are not just delicious, they pack a nutritious punch too. In this video I show you how North and Eastern Ugandans prepare this staple dish. Basically, the greens are cooked for 15 minutes and then smothered in peanut butter for one amazing stew that goes well with any side dish from sweet potatoes, rice, ugali and cassava to mashed bananas and potatoes. Also, my ancestors added an additional leafy green locally known as 'mundrokolo' or 'otigo' which offered those afflicted with bouts of constipation great relief. This leafy green can be substituted with lady fingers for the same result. Enj😊y.
