Roasted Chicken Quarters with Potatoes & Asparagus Ingredients • 3 chicken leg quarters • 1 tbsp onion powder • 1 tbsp garlic powder • 1 tsp Italian seasoning • 1 tbsp Creole seasoning • 1 tsp black pepper • 1 tsp paprika • Juice of 1 lemon • 3 tbsp softened butter • ¼ cup chicken broth • 1 tbsp fresh thyme (minced) • 1 tbsp fresh rosemary (minced) • 6 small golden potatoes, diced • 1 handful asparagus, chopped • Olive oil ⸻ Instructions 1. Preheat oven to 380°F. 2. In a bowl, mix butter, half the seasonings, broth, lemon juice, thyme, and rosemary. 3. Score chicken, pour the mixture over it, and marinate for 15–30 mins. 4. Toss potatoes and asparagus in olive oil and the remaining seasoning. 5. In a baking dish, place chicken on one side, potatoes in the middle, and asparagus on the other side. 6.
