Ingredients For the chicken: • 1500g chicken thighs (about 3 medium) • A handful of onion • Half a thumb-sized piece of ginger • 2 cloves garlic (crushed) • 1 teaspoon thyme (or a few sprigs of fresh thyme) • 1 teaspoon curry powder • 2 teaspoons salt • 4 chicken stock cubes, crushed (2 teaspoons) • 1/2 cup water For the tomato sauce: • 9 tomatoes (600g) • 3 large bell peppers (550g) • 1-2 scotch bonnet peppers • 1/2 small red onion For the rice: • 6 cups rice (1200g) • 1/2 cup oil • A handful of chopped onion • 327g (12oz) tomato paste • 1 1/2 cups tomato sauce blended (410 g) • 2 1/2 teaspoons salt • 1 teaspoon crushed chicken bouillon cube (Knorr) • 1 tablespoon dried thyme • 2 bay leaves • 1 tablespoon curry powder • 2 cups chicken broth • 2 cups water I hope you enjoy this recipe!
