Pil Pili hot sauce or sometimes called PiriPiri is a very popular recipe in Kenyan cuisine especially coastal areas and comes in many variations depending on a cooks whims .The recipe mostly calls for African birds eye chili but you can definitely use whatever kind is available to you., a long as its packed with heat, scotch bonnets , habaneros or Thai birds eye chilis will all work. Pili pili ya kukaanga is the local Swahili name in Mombasa and surrounding coastal areas and even in Upcountry. INGREDIENTS NEEDED 1/2 - 1Lbs ( 225g -450g ) Hot Chilis, ( See above for varieties ), cleaned and chopped 1/2 Cup brown sugar 1 Red onion, peeled and sliced thin 2 Red bell peppers, thinly sliced 1 Green bell pepper, thinly sliced 1 Medium carrot grated ( about 1 cup ) 4 Ripe tomatoes, diced 1 Tbs garlic, chopped 1 Tbs Ginger, minced 1 Tsp Garam masala 1 Tsp Cumin 1 Tsp Coriander 1 Tsp Paprika 1 Tbs Tomato paste 2 Bay leafs 1 Small bunch Cilantro 2 Scallions ( optional) to finish 1 Cup water or as needed 1 Lemon, juiced 1/2 Cup Rice wine vinegar 1 Cup Olive oil, to cook and finish Salt and pepper to taste
